Chorizo Burgers

Chorizo Burgers

INGREDIENTS

  • 1 pound 80% lean ground beef
  • 1 pound bulk chorizo sausage
  • 3/4 cup diced queso fresco cheese
  • 1 tablespoon Essential Everyday Pure Vegetable Oil
  • 3/4 cup sliced onion
  • 1/2 cup sliced red bell pepper
  • 1/2 cup sliced poblano peppers or green belle peppers
  • 1 Serrano Chile seeded and sliced
  • 1 ripe avocado peeled, pitted and diced
  • 1/4 cup Essential Everyday Sour Cream
  • 1/4 cup Essential Everyday Thick And Chunky Salsa
  • 6 Kaiser rolls toasted

DIRECTIONS

  • Prep:  In large bowl, combine ground beef and chorizo; salt and pepper to taste. Form into 12 (5-inch) patties. Place cheese in the center of 6 patties; top with remaining patties. Press edges together, pinching to completely seal. Set aside.

 

  • Combine:  In large skillet, heat oil over medium-high heat; add onion and peppers; salt and pepper to taste. Sauté until softened and caramelized (about 8-10 minutes).
  • In medium bowl, combine avocado, sour cream and salsa; salt and pepper to taste. Mash to desired consistency
  • Meanwhile, prepare grill to medium heat. Place burgers on grill. Grill, turning once, about 7-14 minutes or until internal temperature reaches 160°F on an instant read thermometer.

 

  • Create:  Spread avocado mixture over Kaiser rolls. Top with burgers and caramelized onions and peppers.
