Crispy Rice Ice Cream Cups

INGREDIENTS

  • 1/2 cup Essential Everyday Butter
  • 6 cups Essential Everyday Miniature Marshmallows
  • 1 teaspoon Essential Everyday Pure Vanilla Extract
  • 6 cups Essential Everyday Crispy Rice Cereal
  • 1 cup Essential Everyday Semi-sweet Chocolate Chips melted

DIRECTIONS

  • Prep:  Melt butter in a large saucepan over low heat.

 

  • Combine:  Add marshmallows and stir until melted. Stir in vanilla and remove from heat.
  • Stir in cereal until well coated. Divide cereal among 1 greased (12-count) muffin. Press firmly into bottom and up sides creating a cup shape. Refrigerate 1 hour or until firm.

 

  • Create:  Dip rim of cup into melted chocolate. Let harden. Serve filled with ice cream.
