Essential Everyday Cheesy Bacon Potato Salad

INGREDIENTS

  • 3 lbs yellow potatoes, peeled and cut into 1” cubes
  • 3/4 cup chopped, cooked Essential Everyday Bacon
  • 3/4 cup celery, diced
  • 1/3 cup red onion, finely chopped
  • 2 tablespoons fresh parsley, finely chopped
  • 1 1/2 tablespoon fresh dill, finely chopped
  • 1 cup shredded Essential Everyday Mild Cheddar
  • 4 hard boiled Essential Everyday Eggs, chopped
  • 1 cup Essential Everyday Mayonnaise
  • 1 tablespoon Essential Everyday Yellow Mustard
  • 1 tablespoon white vinegar
  • 1 teaspoon kosher salt
  • 1/2 teaspoon garlic powder
  • Ground black pepper to taste
  • Garnish with paprika and chopped fresh herbs

DIRECTIONS

  • Prep:  Bring 12 cups of water and 1 tbsp salt to a boil in a large pot. Once boiling, add the potatoes. Reduce heat and simmer for 11-13 minutes, until fork tender. Drain and rinse until cold water to cool off.
    • Meanwhile, cook bacon as instructed on packaging. Let cool, then chop finely.

 

  • Combine:  In a large bowl, whisk together mayonnaise, mustard, vinegar, salt, garlic powder and pepper until smooth.

 

  • Create:  Add in the potatoes, bacon, celery, onion, parsley, dill, cheddar and eggs. Stir until well coated.

 

    • Optional: Refrigerate 1 hour before serving. Garnish with paprika and more chopped herbs.
