Prep: Bring 12 cups of water and 1 tbsp salt to a boil in a large pot. Once boiling, add the potatoes. Reduce heat and simmer for 11-13 minutes, until fork tender. Drain and rinse until cold water to cool off.
Meanwhile, cook bacon as instructed on packaging. Let cool, then chop finely.
Combine: In a large bowl, whisk together mayonnaise, mustard, vinegar, salt, garlic powder and pepper until smooth.
Create: Add in the potatoes, bacon, celery, onion, parsley, dill, cheddar and eggs. Stir until well coated.
Optional: Refrigerate 1 hour before serving. Garnish with paprika and more chopped herbs.
