Fruited Tuna Salad Croissant Sandwiches

INGREDIENTS

  • 1 - 5 ounce can Essential Everyday Solid White Albacore Tuna In Water, drained
  • 1 Granny Smith apple cored and diced (about 1 cup)
  • 1/2 cup diced celery
  • 1/2 cup chopped dates
  • 1/2 cup Essential Everyday Chopped Walnuts
  • 1/3 cup Essential Everyday Real Mayonnaise
  • 1 tablespoon minced shallots
  • 2 teaspoons Essential Everyday Dijon Mustard
  • 1 teaspoon Essential Everyday Lemon Juice
  • 1/2 teaspoon curry powder
  • 4 large croissants
  • 4 leaves green leaf lettuce

DIRECTIONS

  • Combine:  In large mixing bowl, combine all ingredients except croissants and lettuce.
  •  
    Gently toss until well combined; salt and pepper to taste.

 

  • Create:  Cut croissants in half; divided salad among croissants. Garnish with lettuce.
