Italian Chopped Salad

INGREDIENTS

  • 1 can (15 oz each) chickpeas, drained, rinsed
  • 1/4 cup thinly sliced red onion
  • 1 cup cherry tomatoes, halved
  • 1/4 cup sliced ripe olives
  • 1 jar (6 oz each) marinated artichoke hearts, drained
  • 1/2 cup Vlasic® Mild Pepperoncini Peppers
  • 2 ounces chopped pepperoni or salami
  • 1/2 cup Healthy Choice® Creamy Italian Dressing
  • 1 pkg (9 oz each) Italian blend lettuce
  • 2 cups baby spinach leaves
  • 1/4 cup shredded Parmesan cheese

DIRECTIONS

  • Prep - Stir together chickpeas, onion, tomatoes, olives, artichoke hearts, peppers, pepperoni and dressing in large bowl.
  • Create - Place lettuce and spinach in serving bowl. Pour vegetable mixture over and toss lightly. Garnish with shaved Parmesan.
