Macaroni Salad

  • Serves: Makes 14 Servings

INGREDIENTS

  • 1 - 8 ounce package Essential Everyday Elbow Macaroni
  • 2 large eggs hard boiled and chopped
  • 1 medium tomato seeded and chopped
  • 1 cup chopped cucumber
  • 1/2 cup chopped red bell pepper
  • 1/4 cup sliced green onions
  • 3/4 cup Essential Everyday Real Mayonnaise
  • 1 1/2 teaspoons Essential Everyday White Vinegar
  • 1 teaspoon Essential Everyday Dijon Mustard
  • 1/2 16 ounce package Essential Everyday Bacon cooked and crumbled

DIRECTIONS

  • Prep:  Prepare pasta according to package directions; rinse with cold water and drain.

 

  • Combine:  In large bowl, combine cooled pasta, eggs, tomatoes, cucumbers, red pepper and onions; set aside.
  •  
    In medium bowl, combine mayonnaise, vinegar and mustard; salt and pepper to taste. Toss with salad.

 

  • Create:  Refrigerate, covered, several hours or overnight. Toss with bacon just before serving.
