- 1 5 ounce package Wild Harvest Organic Baby Spinach
- 1 cup Wild Harvest Organic Grape Tomatoes halved
- 1/4 cup chopped walnuts
- 1 ripe avocado peeled, pitted and chopped
- 2 tablespoons fresh squeezed lemon juice
- 2 teaspoons rice vinegar
- 1 teaspoon chopped garlic
- 1 teaspoon lemon zest
- 2 tablespoons Wild Harvest Organic Extra Virgin Olive Oil
- In large bowl, combine spinach, tomatoes, nuts and avocado; set aside.
- In small bowl, whisk together lemon juice, vinegar, garlic and lemon zest; slowly whisk in oil until well combined. Salt and pepper to taste.
- Toss salad with vinaigrette. Serve immediately.
