Spinach Salad with Lemon Vinaigrette

INGREDIENTS

  • 1 5 ounce package Wild Harvest Organic Baby Spinach
  • 1 cup Wild Harvest Organic Grape Tomatoes halved
  • 1/4 cup chopped walnuts
  • 1 ripe avocado peeled, pitted and chopped
  • 2 tablespoons fresh squeezed lemon juice
  • 2 teaspoons rice vinegar
  • 1 teaspoon chopped garlic
  • 1 teaspoon lemon zest
  • 2 tablespoons Wild Harvest Organic Extra Virgin Olive Oil

DIRECTIONS

  • In large bowl, combine spinach, tomatoes, nuts and avocado; set aside.
  • In small bowl, whisk together lemon juice, vinegar, garlic and lemon zest; slowly whisk in oil until well combined. Salt and pepper to taste.
  • Toss salad with vinaigrette. Serve immediately.
