Wild Harvest Pulled Pork Sliders with Toasted Sesame Slaw

INGREDIENTS

  • 1/3 cup packed brown sugar
  • 1/4 cup chili powder
  • 1 tablespoon fine sea salt
  • 1 boneless pork shoulder roast (about 4 pounds)
  • 1/2 cup Wild Harvest Organic Mild BBQ Sauce, plus more for serving
  • 1/3 cup Wild Harvest Organic Mayonnaise
  • 1 tablespoon soy sauce
  • 2 teaspoons toasted sesame oil
  • 1/2 head green cabbage, shredded
  • 2 carrots, shredded
  • 1/2 cup chopped cilantro
  • 3 green onions, thinly sliced
  • 1 tablespoon toasted sesame seeds
  • 12 slider buns, lightly toasted

DIRECTIONS

Prep:

  • In a small bowl, whisk together sugar, chili powder, and salt. Rub mixture all over pork.

 

Combine:

  • Place pork in a slow cooker, cover, and cook on low heat until very tender, 6-8 hours (time will vary depending on the slow cooker). The meat should be fork tender.

 

  • Shred pork, removing and discarding excess fat. Pour liquid from slow cooker into a measuring cup and let sit 10 minutes. The fat will rise to the top. Skim off and discard fat.

 

Create:

  • In a large bowl, whisk together barbecue sauce and ½ cup liquid from slow cooker. Add pork and toss to coat.

 

  • In another large bowl whisk to combine mayonnaise, soy sauce, and sesame oil. Add cabbage, carrots, cilantro, green onion, and sesame seeds and mix well.

 

  • To serve, divide pork among slider buns and top with slaw. Serve warm.
